Mutton Kaliya Gosht or Mutton Kaliya is a traditional Pakistani cuisine. But now it also became an Indian food.
In this recipe have mutton with gravy along with some spices. In original Mutton, Kaliya recipe has only Kashmiri spices are used without onions. But I have used onions also for more taste.

Ingredients  


  • Mutton
  • Thinly sliced onions
  •  Oil

  • Garam masalas ( cinnamon, cloves, peppercorn, mace, cardamom, star anise)

• Salt

• Turmeric powder

• Red chilli powder

• Ginger paste

• Coriander powder

• Yogurt


                              Preparation


1. Add oil in a pan ( you can add oil as much as you want) once the oil heats up to add a cinnamon stick, 5-6 cloves, some peppercorn, 1 blade mace, 4-5 cardamoms, then add thinly sliced red onions, add a generous amount of salt, stir until it gets nice and brown.

2. Then add the mutton in the pan ( the meat needs to be added at a right stage otherwise the onions would get over-browning and that would leave a burnt flavor)

3. Then add 1 tsp of ginger paste, coriander powder, lots of turmeric powder, 1tsp red chili powder, yogurt then mix it well. Cover the pan, lower the flame and allow it to cook for at least 15 minutes.

4. Then open it and stir, add some water and check the salt, if required add some more, then cover it and allow to cook for 20 minutes in a high flame. ( You can cook it in a pressure cooker as an alternate way, in a low flame with the whistle on and cook it for 20 minutes)

5. Then open the pan, the oil should be seen floating on the top of the curry, then give it one quick stir with these your mutton Kalia is done and ready.
